    BEST EVER HEALTHY SOUP
    This easy to make soup is packed with protein so makes it really filling and perfect for lunches. Freeze it in small pots ready to take to work to re-heat.

    Serves 6

    4 TABLESPOONS OF OLIVE OIL

    1 LARGE WHITE ONION PEELED AND FINELY CHOPPED

    4 SLICES OF BACON CHOPPED

    1 TEA SPOON DRIED ROSEMARY

    1 TEASPOON DRIED SAGE

    ½ TEASPOON DRIED CHILLI FLAKES (optional)

    1 X 400G TIN BORLOTTI BEANS, DRAINED

    1 X 400G TIN CANNELLINI BEANS, DRAINED

    1 X 400G TIN CHICKPEAS, DRAINED

    1 X 400G TIN LENTILS, DRAINED

    1 X 400G TIN CHOPPED TOMATOES

    1 PINT VEGETABLE STOCK MADE WITH TWO STOCK CUBES

    2 TABLESPOONS FRESH CHOPPED FAT LEAF PARSLEY (optional)

    SALT & PEPPER TO TASTE

    DIRECTIONS:

    Place the oil in a large saucepan over a medium heat. Fry the onion and bacon for 5-8 minutes, stirring occasionally, until the onion has softened.

    Add the rosemary and chili flakes, cook for a further 2 minutes, then add the beans, chickpeas and lentils. Stir well and cook for 3 minutes.

    Add the tomatoes and stock and bring to a simmer. Cook on a low heat, uncovered, for 30 minutes, stirring occasionally.

    Season with salt & pepper, fold in the parsley and allow to rest for 5 minutes. Serve in warm bowels.
